  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet over medium heat, sauté the onion and bell peppers in a tablespoon of oil until softened (about 5-7 minutes).
  3. In a bowl, whisk together the eggs, cumin, salt, and pepper. Pour this mixture into the skillet with the vegetables and cook until just set but slightly runny; remove from heat.
