A warming, low-calorie soup packed with vegetables and herbs. Perfect for cold days or as a healthy starter.
Ingredients

- 1 medium head cabbage, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 1 onion, diced
- 3 cloves garlic, minced
- 2 tomatoes, diced
- 8 cups vegetable broth
- 2 tablespoons olive oil
- 1 bay leaf
- Salt and pepper to taste
Instructions
- Heat oil in large pot, sauté onions, carrots, celery until soft (5 minutes).
- Add garlic, cook 1 minute.
- Add cabbage, tomatoes, broth, bay leaf, seasonings.
- Bring to boil, reduce heat, simmer 35-40 minutes until vegetables tender.
- Remove bay leaf before serving.
Notes
- Add beans or meat for protein
- Keeps well frozen for 3 months
- Can substitute chicken broth
- Add potatoes for heartier soup
