- 6 corn or flour tortillas
- 2 cups shredded cheddar and Monterey Jack cheese

Instructions
- Preheat your oven to 375°F (190°C).
- Season chicken breasts with salt and pepper. Bake in a greased dish for 25-30 minutes until cooked through. Shred the chicken.
- In a large baking dish, spread some enchilada sauce at the bottom. Layer with tortillas, shredded chicken, more sauce, and cheese. Repeat layers until all ingredients are used.
