Description

  • 4 boneless, skinless chicken breasts, pounded to an even thickness
  • ½ cup all-purpose flour
  • ½ tsp salt
  • ¼ tsp black pepper
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • 2 garlic cloves, minced
  • 1 cup chicken broth
  • ¼ cup fresh lemon juice (about 2 lemons)
  • 2 tbsp capers, drained
  • 2 tbsp chopped fresh parsley (optional, for garnish)

Instructions

  • Prepare Chicken: Combine flour, salt, and pepper in a shallow dish. Dredge chicken breasts in the flour mixture, shaking off excess.
  • Sear Chicken: Heat olive oil in a large skillet over medium heat. Cook chicken for 3-4 minutes per side, or until golden brown and cooked through. Remove and set aside.
  • Make Sauce: In the same skillet, melt butter. Add garlic and sauté for 30 seconds. Pour in chicken broth and lemon juice, scraping up any browned bits from the pan. Stir in capers.
  • Simmer Chicken: Return chicken to the skillet, spooning sauce over the top. Simmer for 5 minutes to meld flavors.
  • Serve: Transfer chicken to a serving plate, spoon sauce over the top, and garnish with parsley. Serve hot with pasta, rice, or vegetables.

Notes

  • For a richer sauce, stir in 2 tbsp heavy cream or half-and-half.
  • Substitute capers with chopped green olives if desired.
