- 4 boneless, skinless chicken breasts, pounded to an even thickness
- ½ cup all-purpose flour
- ½ tsp salt
- ¼ tsp black pepper
- 2 tbsp olive oil
- 2 tbsp unsalted butter
- 2 garlic cloves, minced
- 1 cup chicken broth
- ¼ cup fresh lemon juice (about 2 lemons)
- 2 tbsp capers, drained
- 2 tbsp chopped fresh parsley (optional, for garnish)
Instructions
- Prepare Chicken: Combine flour, salt, and pepper in a shallow dish. Dredge chicken breasts in the flour mixture, shaking off excess.
- Sear Chicken: Heat olive oil in a large skillet over medium heat. Cook chicken for 3-4 minutes per side, or until golden brown and cooked through. Remove and set aside.
- Make Sauce: In the same skillet, melt butter. Add garlic and sauté for 30 seconds. Pour in chicken broth and lemon juice, scraping up any browned bits from the pan. Stir in capers.
- Simmer Chicken: Return chicken to the skillet, spooning sauce over the top. Simmer for 5 minutes to meld flavors.
- Serve: Transfer chicken to a serving plate, spoon sauce over the top, and garnish with parsley. Serve hot with pasta, rice, or vegetables.
Notes
- For a richer sauce, stir in 2 tbsp heavy cream or half-and-half.
- Substitute capers with chopped green olives if desired.
