Chicken Pot Pie Soup: A creamy, comforting soup that captures all the flavors of traditional chicken pot pie in a bowl.

- 2 tablespoons butter
- 1 onion, diced
- 2 carrots, sliced
- 2 celery stalks, diced
- 2 cups cooked chicken, diced
- 4 cups chicken broth
- 2 potatoes, cubed
- 1 cup frozen peas
- 1 cup heavy cream
- Salt and pepper to taste
- 1 teaspoon thyme
- Pie crust crackers (optional garnish)
Instructions
- Melt butter in large pot, sauté onion, carrots, celery until soft (5-7 minutes)
- Add chicken, broth, potatoes. Simmer 15 minutes until potatoes tender
- Stir in peas, cream, seasonings. Simmer 5 minutes
- Serve hot, topped with pie crust crackers if desired

- Make ahead: Store in fridge up to 3 days
- Freeze without cream, add when reheating
- Use rotisserie chicken for convenience
