Description

Chicken Pot Pie Soup: A creamy, comforting soup that captures all the flavors of traditional chicken pot pie in a bowl.


Ingredients

  • 2 tablespoons butter
  • 1 onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, diced
  • 2 cups cooked chicken, diced
  • 4 cups chicken broth
  • 2 potatoes, cubed
  • 1 cup frozen peas
  • 1 cup heavy cream
  • Salt and pepper to taste
  • 1 teaspoon thyme
  • Pie crust crackers (optional garnish)

Instructions

  • Melt butter in large pot, sauté onion, carrots, celery until soft (5-7 minutes)
  • Add chicken, broth, potatoes. Simmer 15 minutes until potatoes tender
  • Stir in peas, cream, seasonings. Simmer 5 minutes
  • Serve hot, topped with pie crust crackers if desired

  • Make ahead: Store in fridge up to 3 days
  • Freeze without cream, add when reheating
  • Use rotisserie chicken for convenience
