- 1 pound penne pasta
- 1½ pounds chicken breast, cut into bite-sized pieces
- 2 tablespoons Cajun seasoning
- 2 cups heavy cream
- 4 cloves garlic, minced
- 1 cup grated Parmesan cheese
- 2 tablespoons olive oil
- Fresh parsley for garnish
- Salt and pepper to taste
Instructions
- Cook penne according to package directions. Reserve 1 cup pasta water before draining.
- Season chicken pieces with 1 tablespoon Cajun seasoning. Heat oil in a large skillet and cook chicken until golden, about 6-7 minutes.
- Remove chicken, add garlic to the pan and sauté until fragrant. Pour in cream and remaining Cajun seasoning, simmer for 5 minutes.
- Return chicken to pan, add Parmesan cheese and stir until sauce thickens. Add pasta and toss to coat, using reserved pasta water if needed.
- Garnish with parsley and serve hot.
Notes
- Adjust Cajun seasoning to your preferred spice level
- For a lighter version, substitute half-and-half for heavy cream
