Ingredients

  • 1 pound penne pasta
  • 1½ pounds chicken breast, cut into bite-sized pieces
  • 2 tablespoons Cajun seasoning
  • 2 cups heavy cream
  • 4 cloves garlic, minced
  • 1 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • Fresh parsley for garnish
  • Salt and pepper to taste

Instructions

  • Cook penne according to package directions. Reserve 1 cup pasta water before draining.
  • Season chicken pieces with 1 tablespoon Cajun seasoning. Heat oil in a large skillet and cook chicken until golden, about 6-7 minutes.
  • Remove chicken, add garlic to the pan and sauté until fragrant. Pour in cream and remaining Cajun seasoning, simmer for 5 minutes.
  • Return chicken to pan, add Parmesan cheese and stir until sauce thickens. Add pasta and toss to coat, using reserved pasta water if needed.
  • Garnish with parsley and serve hot.

Notes

  • Adjust Cajun seasoning to your preferred spice level
  • For a lighter version, substitute half-and-half for heavy cream
