- 6 medium russet potatoes, peeled and diced
- 1 medium onion, finely chopped
- 6 slices bacon, diced
- 4 cups chicken broth
- 2 cups whole milk
- 2 cups sharp cheddar cheese, shredded
- 3 tablespoons butter
- 3 tablespoons all-purpose flour
- Fresh chives for garnish
- Salt and pepper to taste
Instructions
- Cook bacon in a large pot until crispy. Remove and set aside, leaving the fat in the pot.
- Sauté onions in bacon fat until translucent. Add butter and flour, cooking for 2 minutes.
- Gradually whisk in broth and milk. Add potatoes and simmer for 15-20 minutes until tender.
- Stir in cheese until melted. Season with salt and pepper.
- Serve topped with crispy bacon and fresh chives.
Notes
- For a thicker soup, mash some potatoes against the pot’s side
- Can be stored in the refrigerator for up to 3 days
