Ingredients

  • 6 medium russet potatoes, peeled and diced
  • 1 medium onion, finely chopped
  • 6 slices bacon, diced
  • 4 cups chicken broth
  • 2 cups whole milk
  • 2 cups sharp cheddar cheese, shredded
  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour
  • Fresh chives for garnish
  • Salt and pepper to taste

Instructions

  • Cook bacon in a large pot until crispy. Remove and set aside, leaving the fat in the pot.
  • Sauté onions in bacon fat until translucent. Add butter and flour, cooking for 2 minutes.
  • Gradually whisk in broth and milk. Add potatoes and simmer for 15-20 minutes until tender.
  • Stir in cheese until melted. Season with salt and pepper.
  • Serve topped with crispy bacon and fresh chives.

Notes

  • For a thicker soup, mash some potatoes against the pot’s side
