- 4 chicken breasts, boneless and skinless
- 1½ cups basmati rice
- 2 cups chicken broth
- 1 cup heavy cream
- 4 garlic cloves, minced
- 1 tablespoon Italian herbs
- 2 tablespoons butter
- Fresh parsley for garnish
- Salt and pepper to taste
Instructions
- Cook basmati rice according to package instructions using chicken broth instead of water.
- Season chicken breasts with salt, pepper, and half of the Italian herbs. In a large skillet, melt butter over medium-high heat and cook chicken for 5-6 minutes per side until golden. Remove and set aside.
- In the same pan, sauté garlic until fragrant. Add cream, remaining herbs, and simmer for 3 minutes. Return chicken to pan and cook for 5 more minutes until sauce thickens.
- Serve chicken and sauce over rice, garnished with fresh parsley.
Notes
- For extra flavor, deglaze the pan with white wine before adding cream
- Rice can be made ahead and reheated
- Sauce can be made thicker by simmering longer
