Golden-brown, crispy chicken breasts coated in a savory Parmesan crust, made healthier by using an air fryer instead of deep frying. Perfect for a quick weeknight dinner that’s both delicious and satisfying.


Ingredients

  • 4 boneless, skinless chicken breasts (about 6 oz each)
  • 1 cup grated Parmesan cheese
  • 1 cup panko breadcrumbs
  • 2 large eggs
  • 2 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  • Pat chicken breasts dry and season with salt and pepper. If needed, pound to even thickness.
  • In a shallow bowl, mix Parmesan, panko, Italian seasoning, and garlic powder. In another bowl, beat eggs with olive oil.
  • Dip each chicken breast in egg mixture, then coat thoroughly in Parmesan mixture.
  • Preheat air fryer to 375°F (190°C). Place chicken in basket, avoiding overcrowding.
  • Cook for 10 minutes, flip, then cook additional 8-10 minutes until golden brown and internal temperature reaches 165°F (74°C).

  • Spray the air fryer basket lightly with oil to prevent sticking
