- 4 boneless, skinless chicken breasts (about 6 oz each)
- 1 cup grated Parmesan cheese
- 1 cup panko breadcrumbs
- 2 large eggs
- 2 tablespoons olive oil
- 1 teaspoon Italian seasoning
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Pat chicken breasts dry and season with salt and pepper. If needed, pound to even thickness.
- In a shallow bowl, mix Parmesan, panko, Italian seasoning, and garlic powder. In another bowl, beat eggs with olive oil.
- Dip each chicken breast in egg mixture, then coat thoroughly in Parmesan mixture.
- Preheat air fryer to 375°F (190°C). Place chicken in basket, avoiding overcrowding.
- Cook for 10 minutes, flip, then cook additional 8-10 minutes until golden brown and internal temperature reaches 165°F (74°C).
Notes
- Spray the air fryer basket lightly with oil to prevent sticking
- Let chicken rest 5 minutes before cutting
- For extra crispiness, spray the breaded chicken lightly with oil before cooking
