Instructions
- Rinse 1 cup of sushi rice under cold water until clear. Cook according to package instructions and fluff with a fork.
- In a bowl, combine 2 tablespoons of rice vinegar, 1 tablespoon of sugar, and ½ teaspoon of salt until dissolved. Fold this mixture into the cooked rice gently.
- Slice cucumbers and avocados into thin strips.
- Lay a nori sheet shiny side down on a bamboo mat. Spread sushi rice evenly, leaving about an inch at the top edge.
- Place cucumber and avocado strips horizontally across the rice, then roll tightly from the bottom using the mat as a guide.
- Use a sharp knife dipped in water to slice the roll into bite-sized pieces and serve with soy sauce.
