Ingredients

  • Fresh cucumbers
  • Sushi rice
  • Nori sheets
  • Ripe avocado
  • Rice vinegar
  • Sesame seeds
  • Soy sauce

Instructions

  1. Rinse 1 cup of sushi rice under cold water until clear. Cook according to package instructions and fluff with a fork.
  2. In a bowl, combine 2 tablespoons of rice vinegar, 1 tablespoon of sugar, and ½ teaspoon of salt until dissolved. Fold this mixture into the cooked rice gently.
  3. Slice cucumbers and avocados into thin strips.
  4. Lay a nori sheet shiny side down on a bamboo mat. Spread sushi rice evenly, leaving about an inch at the top edge.
  5. Place cucumber and avocado strips horizontally across the rice, then roll tightly from the bottom using the mat as a guide.
  6. Use a sharp knife dipped in water to slice the roll into bite-sized pieces and serve with soy sauce.
