  • 6 cups fresh kale leaves
  • 1 cup tri-color quinoa
  • 3 tbsp extra virgin olive oil
  • 2 tbsp freshly squeezed lemon juice
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • ¼ cup grated Parmesan cheese (optional)

Instructions

  1. Rinse quinoa under cold water. In a saucepan, combine quinoa with 2 cups of water; bring to a boil, then reduce heat and simmer for 15 minutes until fluffy.
  2. While quinoa cooks, wash and tear kale leaves into bite-sized pieces. Place in a large bowl.
  3. Drizzle olive oil over kale, sprinkle with salt and garlic powder, and massage until slightly softened.
  4. Preheat oven to 350°F (175°C). Spread kale on a baking sheet and bake for 10-15 minutes until crispy.
  5. Once quinoa is ready, fluff with a fork and mix with the baked kale. Add lemon juice and toss well.
  6. Serve on a platter topped with optional Parmesan cheese.
