Ingredients

- 2 ripe bananas, mashed
- 1/2 cup butter, softened
- 3/4 cup brown sugar
- 1 egg
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/2 cup chopped walnuts
- 1/2 teaspoon salt
Instructions
- Cream butter and sugar until fluffy, then mix in mashed bananas and egg.
- Combine dry ingredients in separate bowl.
- Mix wet and dry ingredients until just combined, fold in walnuts.
- Drop rounded tablespoons onto lined baking sheets.
- Bake at 350°F (175°C) for 12 minutes until edges are lightly golden.
Notes
- Use overripe bananas for best flavor
- Cookies will be soft when hot; cool completely
- Freeze well for up to 3 months
- Optional: add chocolate chips
