Cranberry Orange Chicken is an easy, flavorful dish that combines juicy chicken with sweet-tart cranberries and zesty oranges, perfect for festive occasions or a cozy weeknight dinner.

  • 34 boneless, skinless chicken breasts
  • 1 cup fresh cranberries
  • 1/2 cup freshly squeezed orange juice
  • Zest of 1 orange
  • 2 tablespoons honey or brown sugar
  • 3 garlic cloves, minced
  • 2 tablespoons low-sodium soy sauce
  • Optional: toasted pine nuts for garnish

Instructions

  1. Preheat oven to 375°F (190°C) and coat a baking dish with nonstick spray.
  2. In a bowl, whisk together orange juice, zest, soy sauce, honey or brown sugar, garlic, salt, and pepper.
  3. Marinate chicken in the mixture for at least 30 minutes in the fridge.
  4. Rinse cranberries and toss them in brown sugar if desired.
  5. Arrange marinated chicken in the baking dish and scatter cranberries over it.
  6. Bake for 25-30 minutes until chicken reaches an internal temperature of 165°F (75°C). Allow resting for 5 minutes before serving.
