Cranberry Orange Chicken is an easy, flavorful dish that combines juicy chicken with sweet-tart cranberries and zesty oranges, perfect for festive occasions or a cozy weeknight dinner.

- 3–4 boneless, skinless chicken breasts
- 1 cup fresh cranberries
- 1/2 cup freshly squeezed orange juice
- Zest of 1 orange
- 2 tablespoons honey or brown sugar
- 3 garlic cloves, minced
- 2 tablespoons low-sodium soy sauce
- Optional: toasted pine nuts for garnish
Instructions
- Preheat oven to 375°F (190°C) and coat a baking dish with nonstick spray.
- In a bowl, whisk together orange juice, zest, soy sauce, honey or brown sugar, garlic, salt, and pepper.
- Marinate chicken in the mixture for at least 30 minutes in the fridge.
- Rinse cranberries and toss them in brown sugar if desired.
- Arrange marinated chicken in the baking dish and scatter cranberries over it.
- Bake for 25-30 minutes until chicken reaches an internal temperature of 165°F (75°C). Allow resting for 5 minutes before serving.
