  • 1 lb baby Yukon Gold or fingerling potatoes

Instructions

  1. Wash and cut the potatoes into halves or quarters. Mince the garlic and finely chop herbs.
  2. Heat oil in a skillet over medium heat, add potatoes, and cook until golden brown and fork-tender (15-20 minutes).
  3. In another pan, melt half the butter over medium-high heat. Add cubed steak, searing for 3-4 minutes per side for medium-rare.
  4. When the steak is nearly done, add minced garlic and chopped herbs along with remaining butter. Stir to coat.
  5. Return crispy potatoes to the skillet with steak and gently mix for 2 minutes to combine flavors.
