Instructions

  • Preheat Oven: Preheat to 350°F (175°C). Line a 12-cup muffin tin with paper liners or grease well.
  • Mix Dry Ingredients: In a large bowl, whisk together all-purpose flour, whole wheat flour, baking soda, cinnamon, ginger (if using), and salt.
  • Mix Wet Ingredients: In another bowl, whisk sugar, brown sugar, oil, applesauce, eggs, and vanilla until smooth.
