Instructions
- Preheat Oven: Preheat to 350°F (175°C). Line a 12-cup muffin tin with paper liners or grease well.
- Mix Dry Ingredients: In a large bowl, whisk together all-purpose flour, whole wheat flour, baking soda, cinnamon, ginger (if using), and salt.
- Mix Wet Ingredients: In another bowl, whisk sugar, brown sugar, oil, applesauce, eggs, and vanilla until smooth.
- Combine: Gradually mix the wet ingredients into the dry ingredients until just combined. Fold in carrots, apple, raisins, nuts, and coconut. Do not overmix.
- Fill Muffin Cups: Spoon the batter evenly into the prepared muffin tin, filling each cup about ¾ full.
- Bake: Bake for 22-25 minutes, or until a toothpick inserted into the center comes out clean.
- Cool: Let muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
