A quick one-pan meal combining Rice-A-Roni with chicken and vegetables. Perfect for busy weeknights.
Ingredients

- 1 box Chicken Rice-A-Roni
- 1 pound chicken breast, diced
- 1 cup frozen mixed vegetables
- 2 tablespoons butter
- 2 1/4 cups water
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Brown chicken in olive oil over medium heat (5-7 minutes).
- Add butter and Rice-A-Roni, cook until vermicelli is golden.
- Add water and seasoning packet; bring to boil.
- Reduce heat, add vegetables, simmer covered for 15-20 minutes.
- Let stand 5 minutes before serving.
Notes
- Use any frozen vegetable mix
- Add garlic powder for extra flavor
- Can substitute chicken with shrimp or tofu
- Keeps well for 2 days refrigerated
