Ingredients

  • 1 box Chicken Rice-A-Roni
  • 1 pound chicken breast, diced
  • 1 cup frozen mixed vegetables
  • 2 tablespoons butter
  • 2 1/4 cups water
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Brown chicken in olive oil over medium heat (5-7 minutes).
  2. Add butter and Rice-A-Roni, cook until vermicelli is golden.
  3. Add water and seasoning packet; bring to boil.
  4. Reduce heat, add vegetables, simmer covered for 15-20 minutes.
  5. Let stand 5 minutes before serving.

Notes

  • Use any frozen vegetable mix
  • Add garlic powder for extra flavor
