Delicious Sausage Kale Pasta Recipe

Description

A hearty pasta dish combining Italian sausage, fresh kale, and pasta in a garlic white wine sauce.


Ingredients

Scale
  • 1 lb Italian sausage, removed from casings
  • 2 bunches kale, stems removed, chopped
  • 1 lb penne pasta
  • 6 garlic cloves, minced
  • 1/2 cup white wine
  • 1/2 cup pasta water
  • 1/3 cup olive oil
  • Red pepper flakes, salt, black pepper
  • Parmesan cheese for serving

Instructions

  • Cook pasta according to package directions. Reserve 1/2 cup pasta water before draining.
  • Brown sausage in large skillet over medium heat (8-10 minutes). Remove and set aside.
  • In same pan, sauté garlic and red pepper flakes in olive oil (1 minute). Add kale and cook until wilted (5 minutes).
  • Add wine, simmer 2 minutes. Return sausage to pan.
  • Toss in pasta and reserved pasta water. Season with salt and pepper.
  • Serve topped with grated Parmesan.

Notes

  • Use spicy or mild Italian sausage based on preference
  • Substitute spinach for kale if desired
  • Wine can be replaced with chicken broth
  • Prep Time: 15 minutes
