Description
A hearty pasta dish combining Italian sausage, fresh kale, and pasta in a garlic white wine sauce.
Ingredients
Scale
- 1 lb Italian sausage, removed from casings
- 2 bunches kale, stems removed, chopped
- 1 lb penne pasta
- 6 garlic cloves, minced
- 1/2 cup white wine
- 1/2 cup pasta water
- 1/3 cup olive oil
- Red pepper flakes, salt, black pepper
- Parmesan cheese for serving
Instructions
- Cook pasta according to package directions. Reserve 1/2 cup pasta water before draining.
- Brown sausage in large skillet over medium heat (8-10 minutes). Remove and set aside.
- In same pan, sauté garlic and red pepper flakes in olive oil (1 minute). Add kale and cook until wilted (5 minutes).
- Add wine, simmer 2 minutes. Return sausage to pan.
- Toss in pasta and reserved pasta water. Season with salt and pepper.
- Serve topped with grated Parmesan.
Notes
- Use spicy or mild Italian sausage based on preference
- Substitute spinach for kale if desired
- Wine can be replaced with chicken broth
