Ingredients

  • Lasagna noodles
  • Ricotta cheese
  • Fresh or frozen spinach
  • Shredded mozzarella cheese
  • Grated parmesan cheese
  • Eggs
  • Italian seasoning
  • Marinara sauce
  • Garlic powder
  • Red pepper flakes (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cook lasagna noodles as directed until al dente; drain and set aside.
  3. In a bowl, mix ricotta, eggs, spinach, garlic powder, Italian seasoning, and half of the parmesan until smooth.
  4. In a baking dish, layer marinara sauce, noodles, ricotta mixture, and mozzarella cheese. Repeat layers up to three times.
  5. Cover with foil and bake for 30 minutes. Remove foil and bake an additional 15 minutes until golden.
  6. Let cool for 10 minutes before slicing.
