- 2 cups fresh green peas (or frozen)
- 1 medium yellow onion, diced
- 2 garlic cloves, minced
- 4 cups low-sodium vegetable broth
- 1/4 cup fresh mint leaves, chopped
- Juice of 1 lemon
- 1/2 cup heavy cream (optional)
- Salt and pepper to taste
- Rinse fresh peas under cold water. Finely chop the onion and garlic.
- Heat olive oil in a large pot over medium heat. Sauté the onion until translucent (about 5 minutes).
- Add minced garlic and fresh peas; stir for about 2 minutes.
