- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 2 cloves fresh garlic, minced
- 4 soft pita breads
- 1 cup plain Greek yogurt
- 2 cups romaine lettuce, chopped
- 1 cup ripe tomatoes, diced
- 1 cucumber, sliced
- Juice of 1 lemon
- 3 tbsp extra virgin olive oil
- 1 tsp paprika
- 1 tsp cumin
- Salt and pepper to taste
Instructions
- Chop lettuce, dice tomatoes, and slice cucumbers; set aside.
- In a bowl, mix olive oil, lemon juice, garlic, paprika, cumin, salt, and pepper. Add chicken breasts and marinate for at least 30 minutes.
- Heat grill or skillet over medium-high heat. Cook chicken for about 6-7 minutes per side until golden brown (internal temperature of 165°F).
- Remove from heat and let rest for a few minutes before slicing into thin strips.
- Open each pita pocket and fill with sliced chicken first, then layer in lettuce, tomatoes, cucumbers.
- Drizzle Greek yogurt over filled pitas or serve on the side as a dip.
