- 2 cups frozen sweet corn (thawed)
- 1 cup crispy Fritos
- 1 green bell pepper (finely chopped)
- 1/2 red onion (diced)
- 1 cup mayonnaise
- 1 packet ranch dressing mix
- 2 tablespoons lime juice (freshly squeezed)
- Chopped cilantro (optional)
- In a large bowl, combine thawed sweet corn, chopped green bell pepper, diced red onion, and optional cilantro.
- In a separate bowl, mix mayonnaise with ranch dressing mix and lime juice until smooth.
- Pour the dressing over the corn mixture and gently fold to combine.
