- 2 eggs, beaten
- 1 cup pre-cooked protein (chicken, shrimp, or tofu)
Instructions
- Gather and prep all ingredients: dice onions and mince garlic; wash and chop fresh vegetables if using.
- Heat vegetable oil in a large skillet or wok over medium-high heat. Sauté minced garlic and diced onion until golden brown, about 2 minutes.
- Add mixed vegetables to the pan; sauté until tender-crisp, around 3-4 minutes.
- Push veggies to one side of the pan; pour in beaten eggs on the other side and scramble until fully cooked (about 1-2 minutes).
- Gradually add cooked rice while breaking apart clumps. Drizzle soy sauce evenly over the mixture and stir well to combine.
- Stir in chopped green onions and any pre-cooked protein, mixing thoroughly until everything is heated through.
