- 1 ripe avocado, diced
- 1/2 cup Greek yogurt (or mayo for a richer taste)
- 1 tbsp Dijon mustard
- 1 tbsp fresh lime juice
- 1/4 cup red onion, finely chopped
- 1/2 cup celery, chopped
- Salt and pepper to taste
- 1 tbsp fresh cilantro, chopped (optional)
Instructions
- In a large bowl, combine shredded chicken, diced avocado, red onion, and celery.
- In a separate small bowl, mix Greek yogurt, Dijon mustard, lime juice, salt, and pepper until smooth.
- Pour the dressing over the chicken mixture and gently toss until well combined.
- Taste and adjust seasoning with more salt, pepper, or lime juice if needed.
- Garnish with fresh cilantro (optional) and serve on its own, in a wrap, or over a bed of greens.
