  • 4 medium russet or Yukon gold potatoes, peeled and sliced
  • 1 onion, chopped
  • 2 cups shredded cheddar cheese
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup milk
  • Salt and pepper to taste
  • Breadcrumbs for topping (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and grease a large baking dish.
  2. In a skillet over medium heat, brown the ground beef with the chopped onion; drain excess fat.
  3. In a bowl, mix cream of mushroom soup and milk until smooth.
  4. Layer half of the sliced potatoes in the baking dish; season lightly with salt and pepper.
  5. Add half of the cooked beef mixture followed by half of the soup mixture and top with one cup of cheddar cheese.
  6. Repeat layers with remaining ingredients.
  7. Cover with foil and bake for 45 minutes. Remove foil and bake an additional 15 minutes until bubbly.
