- 1 tablespoon fresh ginger, minced
- 14 ounces canned diced tomatoes
- 1 cup heavy cream (or coconut milk)
- 1 tablespoon garam masala
- 1 tablespoon cumin
- 1 tablespoon coriander
Instructions
- Set your Instant Pot to sauté mode and melt the butter. Cook the onion until translucent, then add garlic and ginger for one additional minute.
- Add cubed chicken thighs along with garam masala, cumin, coriander, salt, and pepper. Stir for 3-4 minutes until slightly browned.
- Pour in the diced tomatoes and stir well to prevent sticking.
- Close the lid and pressure cook on high for 10 minutes. Allow natural pressure release for 5 minutes before quick-releasing any remaining steam.
- Stir in heavy cream until fully combined; simmer on sauté mode for an additional 2-3 minutes if a thicker sauce is desired.
