  • 14 ounces canned diced tomatoes
  • 1 cup heavy cream (or coconut milk)
  • 1 tablespoon garam masala
  • 1 tablespoon cumin
  • 1 tablespoon coriander

Instructions

  1. Set your Instant Pot to sauté mode and melt the butter. Cook the onion until translucent, then add garlic and ginger for one additional minute.
  2. Add cubed chicken thighs along with garam masala, cumin, coriander, salt, and pepper. Stir for 3-4 minutes until slightly browned.
