  • 2 lbs Yukon Gold potatoes
  • 2 large sweet onions (Vidalia or yellow)
  • 4 tbsp unsalted butter
  • 1 cup heavy cream
  • 2 cups grated Gruyère cheese
  • 1 tsp garlic powder
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a baking dish.
  2. In a skillet, melt butter over medium heat and sauté sliced onions until caramelized (about 15-20 minutes).
  3. In a bowl, mix heavy cream with garlic powder, thyme, salt, and pepper.
  4. Layer half of the potato slices in the baking dish, add half of the onions, pour half of the cream mixture, and sprinkle half of the cheese on top. Repeat the layers with remaining ingredients.
  5. Cover with foil and bake for 30 minutes. Remove foil and bake for another 15-20 minutes until bubbly and golden brown.
