- 1 loaf brioche bread, cut into 1-inch thick slices
- 4 large eggs
- 1½ cups heavy cream
- 2 teaspoons vanilla extract
- ¼ teaspoon salt
- ⅓ cup granulated sugar (for topping)
- 2 tablespoons brown sugar
- 3 tablespoons butter, for cooking
Instructions
- Whisk together eggs, heavy cream, vanilla, and salt in a shallow dish. Soak bread slices in the mixture for 2-3 minutes per side.
- Heat butter in a large skillet over medium heat. Cook soaked bread for 3-4 minutes per side until golden brown.
- Before serving, sprinkle each slice with a mixture of granulated and brown sugar. Use a kitchen torch to caramelize the sugar until golden and crispy, or place under the broiler for 2-3 minutes, watching carefully.
Notes
- For best results, use day-old bread as it absorbs the custard better
- If you don’t have a kitchen torch, the broiler method works well but requires close attention
- Let bread soak thoroughly but not so long that it becomes too soggy
