- 2 tbsp lemon juice (freshly squeezed)

Instructions
- In a bowl, mix olive oil, lemon juice, minced garlic, paprika, cumin, and salt.
- Add cubed chicken thighs to the marinade and coat well. Let marinate for at least 30 minutes.
- While chicken marinates, chop bell peppers and red onion into uniform pieces.
- Thread marinated chicken and vegetables onto skewers in an alternating pattern.
- Preheat grill to medium-high heat and lightly brush with olive oil.
- Grill skewers for about 10–12 minutes, rotating occasionally until chicken reaches an internal temperature of 165°F (74°C).
- Once cooked, let kabobs rest before serving.
