  • 2 tbsp lemon juice (freshly squeezed)

Instructions

  1. In a bowl, mix olive oil, lemon juice, minced garlic, paprika, cumin, and salt.
  2. Add cubed chicken thighs to the marinade and coat well. Let marinate for at least 30 minutes.
  3. While chicken marinates, chop bell peppers and red onion into uniform pieces.
  4. Thread marinated chicken and vegetables onto skewers in an alternating pattern.
  5. Preheat grill to medium-high heat and lightly brush with olive oil.
  6. Grill skewers for about 10–12 minutes, rotating occasionally until chicken reaches an internal temperature of 165°F (74°C).
