  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, finely diced
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup fresh lime juice (about 2 limes)
  • 2 tbsp extra virgin olive oil
  • 1 jalapeño pepper, seeded and diced
  • Salt and pepper to taste

Instructions

  1. Rinse the black beans under cold water until no foam appears; drain well.
  2. Finely chop the cherry tomatoes and red onion.
  3. In a large bowl, combine the black beans, corn, tomatoes, red onion, jalapeño pepper, and cilantro.
  4. In a separate bowl, whisk together lime juice and olive oil. Drizzle over the veggie mixture.
  5. Toss gently until everything is well coated. Adjust salt and pepper to taste.
  6. Serve immediately or chill before serving with tortilla chips.
