Ingredients
- 1 lb ground beef (80/20 blend)
- 1 medium yellow onion, finely chopped
- 1 medium green bell pepper, diced
- 1 cup shredded mozzarella cheese
- 1 ½ cups almond flour
- 2 large eggs (room temperature)
- 1 tsp garlic powder
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Heat olive oil in a skillet over medium heat. Sauté onion and green bell pepper until softened.
- Add ground beef to the skillet along with garlic powder, salt, and pepper. Cook until browned.
- In a bowl, combine almond flour and eggs to form a dough. If sticky, add more almond flour gradually.
- Preheat oven to 375°F (190°C). Roll out dough between parchment paper to about half an inch thick and cut into rectangles.
- Spoon beef mixture onto each rectangle, sprinkle with mozzarella, then roll up tightly.
- Place rolls seam-side down on a baking sheet lined with parchment paper and bake for 15-20 minutes until golden brown.
