  • 1 lb ground beef (80/20 blend)
  • 1 medium yellow onion, finely chopped
  • 1 medium green bell pepper, diced
  • 1 cup shredded mozzarella cheese
  • 1 ½ cups almond flour
  • 2 large eggs (room temperature)
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a skillet over medium heat. Sauté onion and green bell pepper until softened.
  2. Add ground beef to the skillet along with garlic powder, salt, and pepper. Cook until browned.
  3. In a bowl, combine almond flour and eggs to form a dough. If sticky, add more almond flour gradually.
  4. Preheat oven to 375°F (190°C). Roll out dough between parchment paper to about half an inch thick and cut into rectangles.
  5. Spoon beef mixture onto each rectangle, sprinkle with mozzarella, then roll up tightly.
  6. Place rolls seam-side down on a baking sheet lined with parchment paper and bake for 15-20 minutes until golden brown.
