Instructions

  2. For the lemon curd filling, combine lemon juice, zest, sugar, eggs, and butter in a saucepan over medium heat. Stir continuously until thickened (about 10 minutes). Strain into a bowl, cover with plastic wrap directly on the surface, and chill until set.
  3. In a mixing bowl, cream together softened butter and sugars until light and fluffy. Add eggs one at a time, then mix in flour until just combined.
  4. Scoop tablespoons of dough onto prepared baking sheets. Make an indentation in each ball and fill with chilled lemon curd.
  5. Bake for 12-15 minutes or until golden edges form. Cool on wire racks before sprinkling with superfine sugar for the brûlée topping.
