  • 1 large onion, chopped
  • 45 cloves garlic, minced
  • 2 cups low-sodium beef broth
  • 3 medium carrots, sliced
  • 4 medium Yukon gold or red potatoes, quartered
  • 1 tsp dried thyme (or 1 tbsp fresh)
  • 2 tbsp balsamic vinegar
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 300°F (150°C).
  2. Season the beef chuck roast with salt and pepper. In a large dutch oven, heat olive oil over medium-high heat and sear the roast on all sides until browned.
  3. Remove the roast and sauté onions and garlic in the same pot until golden brown.
  4. Add beef broth and balsamic vinegar, stirring to combine.
  5. Return the roast to the pot, add carrots and potatoes, sprinkle thyme on top, then cover with a lid.
  6. Cook in the preheated oven for 3 to 4 hours or until tender.
  7. Let rest for 15 minutes before serving with gravy and veggies.
