  • 2 medium zucchini, sliced
  • 1 cup cherry tomatoes, halved
  • 3 tbsp extra virgin olive oil
  • 4 garlic cloves, minced
  • 2 tsp dried oregano
  • 1 cup crumbled feta cheese
  • 1 tsp Italian seasoning blend
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C) and grease a baking dish.
  2. In a bowl, season chicken with olive oil, salt, pepper, and half the oregano.
  3. Add zucchini and cherry tomatoes to the bowl with garlic and remaining oregano; mix well.
  4. Whisk together lemon juice and Italian seasoning; pour over chicken and veggies in the baking dish.
  5. Bake uncovered for 25-30 minutes until chicken reaches 165°F (75°C) and vegetables are tender.
  6. Sprinkle feta cheese on top during the last 5 minutes of baking.
