  • 3 large eggs
  • 1 tsp pure vanilla extract
  • 1 cup toasted pecans, roughly chopped
  • 1 cup heavy cream, cold
  • 1/4 cup light brown sugar

Instructions

  1. Preheat oven to 350°F (175°C). In a bowl, mix graham cracker crumbs, melted butter, and sugar until combined. Press into the bottom of a springform pan.
  2. Bake crust for 10 minutes until golden brown; let cool.
  3. In a large bowl, beat softened cream cheese and sugar until smooth. Add eggs one at a time and mix in vanilla extract.
  4. Fold in the chopped pecans and pour filling over crust.
  5. Bake for 50-60 minutes until slightly jiggly in the center. Cool in the oven with the door cracked open.
  6. Whip heavy cream with brown sugar until soft peaks form; spread on cooled cheesecake before serving.
