  • 3 cups powdered sugar
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, whisk together flour, baking soda, baking powder, cinnamon, nutmeg, ginger, and salt.
  3. In another bowl, beat softened butter, brown sugar, and granulated sugar until light and fluffy. Add pumpkin puree, eggs, and vanilla; mix until smooth.
  4. Gradually fold in the dry ingredients until just combined.
  5. Scoop rounded tablespoons of dough onto lined baking sheets, spacing them two inches apart.
  6. Bake for 12–15 minutes until edges are golden and centers are soft. Cool on wire racks.
  7. For frosting: Beat cream cheese and butter until smooth. Gradually add powdered sugar and vanilla until combined.
