  • 2 lbs ripe tomatoes, halved
  • 1 head garlic
  • 1 medium yellow onion, diced
  • 4 cups low-sodium vegetable broth
  • 3 tbsp extra virgin olive oil
  • 1 cup fresh basil leaves
  • 1 tsp sugar
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Place halved tomatoes cut-side up on the baking sheet; drizzle with olive oil and sprinkle with salt and pepper.
  3. Wrap the whole head of garlic in aluminum foil drizzled with olive oil and place it alongside the tomatoes. Roast for 30-35 minutes until caramelized.
  4. In a large pot, heat some olive oil over medium heat; sauté diced onions until translucent, about 5 minutes.
  5. Once roasted, squeeze garlic cloves into the pot along with tomatoes; stir and combine.
  6. Puree the mixture using an immersion blender until smooth. Adjust seasoning if necessary.
