  • 1 cup pecans (toasted)
  • 1/2 cup maple syrup
  • 1 tsp pure vanilla extract
  • 2 tbsp lemon juice
  • 1/2 cup dairy-free caramel sauce

Instructions

  1. Prepare the crust by blending 1 cup of dates with 1 cup of almond flour until it resembles wet sand. Press into the bottom of a springform pan.
  2. Drain and rinse the soaked cashews. Blend them with coconut cream, maple syrup, vanilla extract, lemon juice, and a pinch of salt until smooth.
  3. Fold in chopped pecans to the cashew mixture.
  4. Pour the filling over the crust and smooth it out evenly. Cover and refrigerate for at least 4 hours or overnight.
  5. Before serving, drizzle vegan caramel sauce over the top.
