- 1 whole chicken (4–5 pounds)
- 2 fresh lemons
- Fresh rosemary and thyme
- 4 garlic cloves
- 1/4 cup extra virgin olive oil
- Salt and pepper to taste
- 1/2 cup chicken broth
- Preheat your oven to 425°F (220°C).
- Rinse the chicken under cold water and pat dry with paper towels.
- In a bowl, mix olive oil, juice from one lemon, minced garlic, chopped herbs, salt, and pepper.
- Rub the marinade all over the chicken, including under the skin.
- Stuff the cavity with lemon halves and leftover herb stems.
- Place the chicken in a roasting pan breast-side up and roast for about 1 hour 15 minutes or until it reaches an internal temperature of 165°F (74°C).
- Let rest for 10 minutes before carving.
