  • 1/2 cup chicken broth

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Rinse the chicken under cold water and pat dry with paper towels.
  3. In a bowl, mix olive oil, juice from one lemon, minced garlic, chopped herbs, salt, and pepper.
  4. Rub the marinade all over the chicken, including under the skin.
  5. Stuff the cavity with lemon halves and leftover herb stems.
  6. Place the chicken in a roasting pan breast-side up and roast for about 1 hour 15 minutes or until it reaches an internal temperature of 165°F (74°C).
  7. Let rest for 10 minutes before carving.
