- 4 boneless, skinless chicken breasts
- 1 tbsp olive oil
- 2 cloves garlic, minced
- 1 cup sun-dried tomatoes, chopped
- 1/2 cup chicken broth
- 1 cup heavy cream
- 1 cup orzo pasta
- 1/2 cup grated Parmesan cheese
- 1 tsp Italian seasoning
- Salt and pepper to taste
- Fresh basil for garnish (optional)
Instructions
- Cook the chicken: In a large skillet, heat olive oil over medium-high heat. Season chicken breasts with salt and pepper, then cook for 5-7 minutes per side until golden and cooked through. Remove chicken and set aside.
- Make the sauce: In the same skillet, add garlic and cook for 1 minute. Stir in sun-dried tomatoes, chicken broth, and heavy cream. Bring to a simmer and cook for 5 minutes until the sauce thickens slightly.
- Add orzo: Stir in the orzo and Parmesan cheese. Let it cook in the sauce for 10-12 minutes, stirring occasionally until the orzo is tender and the sauce is creamy.
- Combine and serve: Return the chicken to the skillet, nestling it into the orzo. Let everything simmer together for another 5 minutes. Garnish with fresh basil and serve hot.

- For a lighter version, use half-and-half or whole milk instead of heavy cream.
- Add some spinach or mushrooms for extra flavor and nutrition.
