Decadent individual cheesecakes with a caramelized sugar topping, combining classic crème brûlée and creamy cheesecake in perfect portions.
Ingredients

- 1½ cups graham cracker crumbs
- 4 tablespoons melted butter
- 16 oz cream cheese, softened
- ⅔ cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- ¼ cup heavy cream
- Additional sugar for topping
Instructions
- Mix graham crumbs with butter, press into muffin tins lined with paper liners
- Beat cream cheese until smooth, add sugar gradually
- Add eggs one at a time, then vanilla and cream
- Fill liners ¾ full, bake at 325°F for 22-25 minutes
- Cool completely, refrigerate 4 hours
- Before serving, sprinkle sugar on top and caramelize with torch
