Description

Decadent individual cheesecakes with a caramelized sugar topping, combining classic crème brûlée and creamy cheesecake in perfect portions.


Ingredients

Scale
  • 1½ cups graham cracker crumbs
  • 4 tablespoons melted butter
  • 16 oz cream cheese, softened
  • ⅔ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ¼ cup heavy cream
  • Additional sugar for topping

Instructions

  • Mix graham crumbs with butter, press into muffin tins lined with paper liners
  • Beat cream cheese until smooth, add sugar gradually
  • Add eggs one at a time, then vanilla and cream
  • Fill liners ¾ full, bake at 325°F for 22-25 minutes
  • Cool completely, refrigerate 4 hours
  • Before serving, sprinkle sugar on top and caramelize with torch
