  • 1/2 cup sour cream
  • 2 tsp chili powder
  • Salt & pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. In a skillet over medium heat, brown the ground beef until fully cooked; drain excess fat. Season with chili powder, salt, and pepper.
  3. Stir in chopped jalapeños and corn; cook for about three minutes.
  4. In a separate bowl, combine cornbread mix, milk, eggs, sour cream, and half the cheese until smooth. Let it rest for five minutes.
  5. Spread the beef mixture evenly in the baking dish; pour cornbread batter on top.
  6. Bake for 25-30 minutes or until golden brown.
