- 3 tablespoons olive oil
- 4 garlic cloves, minced
- 1 tablespoon fresh rosemary
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Preheat oven to 425°F. Cut potatoes into 1-inch chunks.
- Boil potatoes in salted water for 8 minutes until edges soften.
- Drain, shake in colander to roughen edges.
- Toss with oil, garlic, rosemary, salt, and pepper.
- Spread on baking sheet, single layer.
- Roast 45 minutes, flipping halfway through.
