Description
Sizzling shrimp fajitas with colorful bell peppers and onions, seasoned with Mexican spices and served with warm tortillas.

- 1 lb large shrimp, peeled and deveined
- 3 bell peppers (mixed colors), sliced
- 1 large onion, sliced
- 2 tbsp olive oil
- 2 tbsp fajita seasoning
- 8 flour tortillas
- Lime wedges for serving
Instructions
- Toss shrimp with 1 tbsp fajita seasoning. Heat 1 tbsp oil in large skillet over medium-high heat.
- Cook shrimp 2-3 minutes per side until pink. Remove from pan.
- Add remaining oil, peppers, and onions. Cook 5-6 minutes until tender-crisp.
- Return shrimp to pan, add remaining seasoning, toss 1 minute.
- Serve with warm tortillas and lime wedges.

- Use fresh or thawed frozen shrimp
- Prep vegetables ahead for faster cooking
- Tortillas can be warmed in microwave or on stovetop
