  • 6 slices thick-cut bacon
  • 1 cup cherry tomatoes, halved
  • 2 cups romaine lettuce, chopped
  • 1/2 cup mayonnaise
  • 1 tbsp Dijon mustard
  • Salt and pepper to taste
  • 2 green onions, chopped
  • 1 cup shredded sharp cheddar cheese

Instructions

  1. Cook the rotini in salted boiling water until al dente. Drain and cool under cold water.
  2. Fry bacon in a skillet over medium heat until crispy. Transfer to paper towels to drain and chop into bite-sized pieces.
  3. In a bowl, whisk together mayonnaise, Dijon mustard, salt, and pepper.
  4. In a large bowl, combine cooled pasta, bacon, cherry tomatoes, green onions, cheese, and romaine. Drizzle dressing over the salad and toss gently.
