- 2 large sweet potatoes, cubed
- 5 cups mixed salad greens
- 1/2 cup pecans, toasted
- 1/4 cup dried cranberries
- 3 tablespoons olive oil
- 2 tablespoons balsamic vinegar
- Salt and pepper to taste
Instructions
- Toss sweet potatoes with 2 tablespoons olive oil, salt, and pepper. Roast at 400°F for 25 minutes until tender.
- Whisk remaining olive oil with balsamic vinegar for dressing.
- Combine roasted potatoes, greens, pecans, and cranberries.
- Drizzle with dressing and serve immediately.
Notes
