Description

A warm, hearty salad combining caramelized sweet potatoes with fresh greens, nuts, and a tangy vinaigrette.


Ingredients

  • 2 large sweet potatoes, cubed
  • 5 cups mixed salad greens
  • 1/2 cup pecans, toasted
  • 1/4 cup dried cranberries
  • 3 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • Salt and pepper to taste

Instructions

  • Toss sweet potatoes with 2 tablespoons olive oil, salt, and pepper. Roast at 400°F for 25 minutes until tender.
  • Whisk remaining olive oil with balsamic vinegar for dressing.
  • Combine roasted potatoes, greens, pecans, and cranberries.
  • Drizzle with dressing and serve immediately.
