For the Crust:

  • 2 cups graham cracker crumbs
  • 1/2 cup melted butter
  • 1/4 cup granulated sugar

For the Filling:

  • 4 (8 oz) packages cream cheese, softened
  • 1 cup granulated sugar
  • 4 large eggs
  • 1 cup sour cream
  • 2 teaspoons vanilla extract

For the Salted Caramel:

  • 1 cup granulated sugar
  • 6 tablespoons butter
  • 1/2 cup heavy cream
  • 1 teaspoon sea salt

Instructions

  1. Preheat oven to 325°F (165°C). Combine graham crumbs, melted butter, and sugar. Press into a 9-inch springform pan.
  2. Beat cream cheese and sugar until smooth. Add eggs one at a time, then mix in sour cream and vanilla. Pour over crust.
  3. Bake for 75 minutes or until center is almost set. Cool completely, then refrigerate for 4 hours.
  4. For caramel: Melt sugar until amber, add butter and cream carefully. Stir in salt. Cool and pour over cheesecake.
