For the Crust:
- 2 cups graham cracker crumbs
- 1/2 cup melted butter
- 1/4 cup granulated sugar
For the Filling:
- 4 (8 oz) packages cream cheese, softened
- 1 cup granulated sugar
- 4 large eggs
- 1 cup sour cream
- 2 teaspoons vanilla extract
For the Salted Caramel:
- 1 cup granulated sugar
- 6 tablespoons butter
- 1/2 cup heavy cream
- 1 teaspoon sea salt
Instructions
- Preheat oven to 325°F (165°C). Combine graham crumbs, melted butter, and sugar. Press into a 9-inch springform pan.
- Beat cream cheese and sugar until smooth. Add eggs one at a time, then mix in sour cream and vanilla. Pour over crust.
- Bake for 75 minutes or until center is almost set. Cool completely, then refrigerate for 4 hours.
- For caramel: Melt sugar until amber, add butter and cream carefully. Stir in salt. Cool and pour over cheesecake.
