  • 2 tbsp taco seasoning
  • 1 (15 oz) can black beans, rinsed and drained
  • 1 cup fresh or frozen corn
  • 1 ripe avocado, diced
  • 1 cup shredded lettuce (romaine or iceberg)
  • ½ cup salsa
  • ½ cup shredded cheddar or Monterey Jack cheese (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Wash sweet potatoes thoroughly and poke holes all over with a fork.
  2. Bake sweet potatoes directly on the oven rack or on a baking sheet for 45-60 minutes until tender.
  3. While baking, heat a skillet over medium heat. Add ground turkey; cook until browned (about 5-7 minutes).
  4. Stir in taco seasoning, black beans, and corn; simmer for 5 minutes until heated through.
  5. Once sweet potatoes are done, slice them open lengthwise and fluff insides with a fork.
  6. Stuff each potato half with turkey filling and top with avocado, lettuce, salsa, and cheese if desired.
