Instructions

  1. Preheat oven to 375°F (190°C). Thinly slice the russet potatoes.
  2. In a skillet, melt butter over medium heat; add sliced onions and sauté until golden brown (about 15 minutes).
  3. In a bowl, whisk together heavy cream, salt, pepper, and thyme.
  4. In a greased baking dish, layer half of the sliced potatoes, half of the creamy mixture, and half of the sautéed onions. Repeat the layers.
  5. Top with Gruyère cheese. Cover with foil and bake for 45 minutes; remove foil and bake another 15-20 minutes until golden brown.
