- 4 large bell peppers (any color)
- 1 lb lean ground turkey
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 cup cooked rice (brown or white)
- 1 can (14.5 oz) diced tomatoes, drained
- 1 cup shredded mozzarella cheese
- 1 tsp cumin
- 1 tsp paprika
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C). Cut the tops off the bell peppers and remove seeds; place upright in a baking dish.
- In a skillet over medium heat, add olive oil and sauté onions until translucent (about 3 minutes). Add ground turkey and garlic; cook until browned (5-7 minutes).
- In a bowl, combine cooked rice, diced tomatoes, sautéed mixture, spices, salt, pepper, and half the cheese. Mix well.
- Stuff each pepper generously with the turkey mixture and top with remaining cheese.
- Cover with foil and bake for 25 minutes; uncover and bake an additional 10 minutes until peppers are tender.
