- 1 lb ground beef (or ground turkey)
- 1 small onion, diced
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) pinto beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (14.5 oz) diced tomatoes (with green chilies, if desired)
- 1 packet (1 oz) taco seasoning
- 2 cups beef or chicken broth
- 1 cup tomato sauce
- Optional toppings: shredded cheese, sour cream, tortilla chips, avocado slices, chopped cilantro
Instructions
- Cook Beef: In a skillet over medium heat, cook ground beef and diced onion until beef is browned. Drain excess fat.
- Combine Ingredients: Transfer the cooked beef and onion mixture to the slow cooker. Add black beans, pinto beans, corn, diced tomatoes, taco seasoning, broth, and tomato sauce. Stir well.
- Slow Cook: Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- Serve: Ladle into bowls and top with your favorite toppings like shredded cheese or tortilla chips. Serve hot.

- Substitute ground beef with shredded chicken for a different twist.
